Colombia Inzá - Las Estrellas Microlote
The majority of coffee-production from this small area in Colombia is done using hand-crank pulpers. The cherries are then fermented overnight, finally drying on raised covered beds ("parabolicos").
The latter helps protect the unstable, wet parchment from the elements, and ventilation facilitates good airflow.
Most of the individual lots making up this special offering were less than a 70 kg bag on their own, but put together it culminates in a 24 bag microlot.
This very limited quantity will afford only a few lucky folks the opportunity to taste "Las Estrellas" themselves, don't miss out!
Las Estrellas shows mouth pleasing fruited acidity, flavors of grape, raw honey, fresh pressed sugarcane juice, and delicious flavors of baking spiced chocolate bar and rum raisin pudding.
